In the western world, Eggplant usually occupies a small section of the grocery store shelves. In the eastern world however the Eggplant still is a staple favourite. How interesting it is that the Eggplant is actually a close relative of the tobacco plant! Even with the many varieties of Eggplant available, it is the purple Eggplant which is supplied to most major supermarkets.
 
Often mistaken for a vegetable, this bitter fruit is highly absorbent of other flavours and sauces when cooked. In raw form Eggplant is very bitter but quickly becomes more flavourful as it becomes cooked. There is a seemingly endless number of Eggplant Recipes available for one to try. Eggplant is often used in a variety of East Indian inspired dips, sauces and entrees. In dip form Eggplant adds wonderful color and a pleasant texture. These dips absorb very well into pita bread slices. There are several Recipes available online for Eggplant Spreads which will go well on regular slices of toast.

Several restaurants have used Eggplant as a coating for their poultry dishes. If you should elect to try this, ensure you follow any recipe closely. Since Eggplant can still retain a slight amount of bitterness once it is cooked, there is still the possibility it could overpower the whole Recipe.

Eggplant And Sausage
2 large Eggplants, washed, peeled, and quartered
2 Eggs
½ cups Self Rising White Cornmeal
½ pound Hot Sausage
3-4 cloves Garlic, peeled and diced
1 can of Rotel Tomatoes, drained
1 package shredded Mozzarella Cheese
Red Pepper Flakes
Fresh Ground Pepper
Coarse Salt, to taste  

Preparation:
1. Preheat oven to 400 F.
2. Steam eggplant until soft.
3. Place eggplant in food processor. Add eggs and cornmeal. Pulse until well blended.
4. Saute hot sausage with diced garlic. Drain off excess oil.
5. Add tomatoes, eggplant mixture, and eggplant mixture to skillet with sausage.
6. Season with salt and pepper.
7. Place sausage and eggplant mixture in greased baking dish.
8. Bake until golden brown around edges.
9. Sprinkle mozzarella cheese over casserole.
10. Place under broiler until melted.
11. Sprinkle with red pepper flakes to taste.

Easy Eggplant Recipe

  • 1 medium eggplant, peeled and sliced into 1/2 inch rounds
  • 4 tablespoons mayonnaise, or as needed
  • 1/2 cup seasoned bread crumbs

  1. Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil.
  2. Place the bread crumbs in a shallow dish. Coat each slice of eggplant on both sides with mayonnaise. Press into the bread crumbs to coat. Place coated eggplant slices on the prepared baking sheet.
  3. Bake for 20 minutes in the preheated oven, until golden brown. Flip slices over, and cook for an additional 20 to 25 minutes to brown the other side.
